As a teacher I used to get all sorts of stationery, stamps are great for grading work from young learners, stickers, glitter gel pens, markers to make posters, shape cutter scissors to make cards for students, and glitter glue among others. These are thigs that we use a lot every year.

You can find a variety of cheeses from Spain and Latin America, including manchego, queso fresco, and cotija. Alfajores are a type of cookie that is popular in Argentina and other countries in the region. Consider putting together a cheese and alfajores selection for your teacher to enjoy.
In my opinion, a box with six alfajores is a excellent idea! I love alfajores and you teacher will love it too! Make sure you buy alfajores from her / his country if they have it, some counntries where alfajores are a traditional (and delicious!) sweet treat are: Argentina, Uruguay, Chile, Colombia, Costa Rica, Mexico, Venezuela and Ecuador.
